A Quick, Friendly and Delicious Sugar Free Almond Cookie Recipe!

Directions

1Preheat oven to 400 degrees F (200 degrees C).

2In large bowl, cream together the butter and coconut sugar. Beat in the egg, amaretto, and almonds. Gradually mix in the flour until well blended.

3Drop small balls of dough, 2 inches apart, on ungreased cookie sheets.

4Bake 5 to 8 minutes in the preheated oven, or until cookies are lightly colored.

Ingredients

1/2 a cup of softened butter

1/2 cup Coconut Sugar

1 and 1/4 cups of flour

1 Egg

1/4 cup agave

1/2 cup ground almonds

1 1/2 teaspoons almond extract

Alright folks, lets gather everything we will need to whip up a quick batch of these wonderful little treats.

Next we want to cream our soft butter (or margarine for dairy free) together with the coconut sugar.

Then we want to beat in the egg, amaretto, and almonds.

I chopped my almonds up in my blender, you can purchase them pre-chopped if you prefer.

Gradually mix in the flour until well blended (usually about ¼cup at a time).

Until the consistency is the same, or it looks something like this 😉

Drop by teaspoonfuls 2 inches apart on ungreased cookie sheets.

Take some sliced almonds and garnish the top of your cookies however you please.

Here’s how I garnished my cookies.

Time to shove these little guys in the oven for 5-8 minutes, or until lightly colored.
