Orange Juice, Orange Zest; Sugar Free Orange Muffins!

Preheat the over to 350 Degrees Fahrenheit. Grease the bottoms of 12 muffin tray slots with shortening, and then spray tray with cooking spray.

Combine flour, baking powder, baking soda, salt, 1/2 cup of Agave Nectar, and grated orange peel. Stir in the orange juice, 1/2 a cup of melted butter, eggs and chopped nuts.

Pour this mixture into the muffin trays (Generally you want the trays to be about 2/3'rds full.

Blend 1 tablespoon melted margarine, 1/4 of a cup of agave nectar, and 1/2 teaspoon of cinnamon. This is the topping that you will pour on the muffins (once they are finished baking).

Put the muffins in the oven for 20-25 minutes, or until golden brown. When you remove them, pour the mixture in Step #4 over them. The hotter you serve them, the better!


3/4 of a Cup of Agave Nectar

2 cups of all-purpose flour

2 teaspoons baking powder

1/4 of a teaspoon of baking soda

1 teaspoon of salt

1 tablespoon of grated orange zest

2/3 of a cup of orange juice

1/2 a cup of melted butter

2 eggs

1 tablespoon of melted butter

1/2 a teaspoon of ground cinnamon
