1Combine all dry ingredients together in a small bowl, fully combine together.
2Cream butter and erythritol together in a medium sized bowl until fully combined.
3Beat in vanilla, egg and pumpkin until smooth.
4Gradually beat in flour mixture.
5Drop rounded tablespoon of dough onto parchment paper lined baking sheets.
6Bake for 15-18 min at 350 degrees F. Until edges are firm.
7Let cool on baking sheets for 2 minutes.

1 tsp of baking soda
1 tsp baking powder
1 1/2 tsp of ground cinnamon
1 tsp of ground nutmeg
1/2 tsp of salt
1 1/2 cup of erythritol
1 cup of softened butter
2 cups of pure sugar free pumpkin
1 large egg
1 tsp of vanilla
