PLEASE NOTE: All ingredients for the cake should be at room temperature
Mix the dry ingredients (flour, baking powder, and baking soda) by passing them through a sieve couple of times. Add the eggs to the mixing bowl
Beat the eggs with an electric mixer until pale yellow in color. Add the erythritol and stevia to the mix.
Add vanilla extract to the mix
Add dry ingredients (flour, baking powder and soda) to the mix.
Add milk to the mix
Add butter to the mix. Mix the batter with an electric mixer.
Add 1/4 cup finely chopped almond pieces to the batter
Add the batter to a springform cake tin
Garnish with ¼ cup almond slices on top of the cake.
Cook in a preheated oven for 40 to 45 minutes or until toothpick comes out clean. You may choose to brush the cake top lightly with melted butter to get a crisp and golden color. Allow to cool on wire rack.
Cut the cake in slices and serve
