Sugar Free Banana Cake

Directions

1Preheat oven to 350 degrees F. Grease and flour a baking tin.

2Mix the flour, baking powder, and baking soda together by passing them through a sieve a couple of times

3Beat the eggs, add erythritol, stevia and vanilla extract to the mix. Add the butter, banana, dry ingredients, and milk and mix well.

4Pour the batter into the baking tin and bake 50-55 Minutes or until toothpick comes out clean. Cool on wire racks for 10 Minutes. Cut the cake in slices and serve.

2 cup of sifted common flour

2 tsp baking powder

1/4 tsp baking soda

2 eggs

1/4 cup erythritol

2 tsp stevia

1/2 cup of soft butter

1/2 tsp. vanilla extract

1/2 cup milk

1 cup banana (finely chopped, soft or frozen and thawed)

PLEASE NOTE: All ingredients for the cake need to be at room temperature. Mix the flour, baking powder, and baking soda together by passing them through a sieve a couple of times.

Add the eggs to the mixing bowl. Beat the eggs with an electric mixer until they are pale yellow in color.

Add the erythritol and stevia to the mix.

Add dry ingredients (flour, baking powder, and soda) to the mix.

Mix all ingredients with an electric mixer until smooth.

Add the cake mix to a springform cake tin.

Place the cake tin in a pre-heated oven for 50 to 55 minutes or until toothpick comes out clean.

Allow to cool on the wire rack.
