Here are all the ingredients we will need to make these delightful little treats.
Cream together the coconut sugar, butter and egg.
The batter should look something like this.
In a separate bowl combine all of the dry ingredients, flour, cinnamon and baking soda.
Slowly add in the dry ingredients, about 1 tbsp at a time, so it can mix in evenly.
Once all the dry ingredients are full combined, slowly add in the oats. Mixing continuously.
Next, we add in our raisins, on low mix them all in.
Now we should be ready to scoop our cookie dough out and onto a baking sheet 🙂
Take a heaping tablespoon and make little balls. Place on the cookie sheet, with enough room for the cookies to expand while cooking.
You can use a fork to flatten your cookies if you like. I personally like a more plump looking cookie.
Bake at 375 for 8-10min. When the tops turn golden brown and you can smell the deliciousness of the oats, they’re done!
Let cool, get a glass of milk and enjoy fully!
