Sugar Free Pumpkin Spice Cookies

Directions

1Combine all dry ingredients together in a small bowl, fully combine together.

2Cream butter and erythritol together in a medium sized bowl until fully combined.

3Beat in vanilla, egg and pumpkin until smooth.

4Gradually beat in flour mixture.

5Drop rounded tablespoon of dough onto parchment paper lined baking sheets.

6Bake for 15-18 min at 350 degrees F. Until edges are firm.

7Let cool on baking sheets for 2 minutes.

Ingredients

2 1/1 cups of flour

1 tsp of baking soda

1 tsp baking powder

1 1/2 tsp of ground cinnamon

1 tsp of ground nutmeg

1/2 tsp of salt

1 1/2 cup of erythritol

1 cup of softened butter

2 cups of pure sugar free pumpkin

1 large egg

1 tsp of vanilla

First step in creating these wonderful fall delights is gathering all the ingredients together.

Next, combine all dry ingredients together in a small bowl.

Mix all the dry ingredients together fully with a whisk.

Cream butter and erythritol together in a medium sized bowl until fully combined.

Now add in the vanilla.

Then your one egg.

And then thirdly, add in the pumpkin pure.

Mix on medium until all ingredients are completely combined.

At this point the batter will look along these lines.

Now its time to slowly add in the flour, a cup at a time. While mixing on low.

Now our batter will look full and smooth like this.

Drop rounded tablespoon of dough onto parchment paper lined baking sheets.

Bake for 15-18 min at 350 degrees F. Until edges are firm. Let cool for two minutes on the pan.
