Directions
1Preheat oven to 375 degrees F. Lightly grease a muffin tin with shortening or non-stick spray
2Combine the flour, poppy seeds, baking powder, baking soda and salt in a large bowl.
3In a separate bowl mix the eggs, agave, yogurt, vegetable oil and lemon zest. Blend well and pour over the flour mixture. Mix until just combined. Do not over mix!
4Spoon batter evenly between the prepared muffin cups until the trays are 2/3'ds full.
5Bake for 20 minutes.
6Let muffins cool in pans for 10 minutes before removing them from the tin.
