1Preheat The Oven to 325 Degrees Fahrenheit.

2Mix the dry ingredients in a large bowl. Then add the apple chunks into it. Mix the wet ingredients in a separate medium sized bowl. Fold the wet ingredients into the dry bowl until it is just moist.

3Put the mixture into muffin tins (with papers in them). Make each slot about 1/2 way full.

4Bake for 20-25 minutes, or until an inserted toothpick comes out clean (no wet batter on it)


1 Cup of Agave Nectar

2 cups all-purpose flour

2 teaspoons baking soda

2 teaspoons ground cinnamon

1/4 teaspoon salt

2 cups shredded carrots

1/2 cup raisins

1/2 cup chopped walnuts

1/2 cup unsweetened flaked coconut

1 peeled, cored, and shredded apple

3 eggs

1/4 of a cup of vegetable oil

1/2 a cup of applesauce (optional, but recommended)

2 teaspoons vanilla extract
