Sugar Free Apple Sauce Cake

1Preheat oven to 350 degrees F for 5 minutes. Grease and flour a baking tin.

2Mix the flour, baking powder, and baking soda together by passing them through a sieve a couple of times.

3Add the apple pieces to 1 cup boiling water and let simmer for 20-25 minutes or until the water is reduced to half of its original quantity. Puree the mix to get 1 cup applesauce.

4In a large bowl, beat the eggs. Add melted butter, erythritol, stevia, and vanilla extract to the mix and combine. Add the dry ingredients and applesauce. Mix well.

5Pour the batter into the baking tin and bake 40 to 45 minutes or until toothpick comes out clean. Cool on wire racks for 10 minutes. Cut the cake in slices and serve.


1 ¾ cups + 2 tbsp sifted common flour

1 ¾ tsp baking powder

½ tsp baking soda

2 apples, peeled and chopped

2 eggs

¼ cup erythritol

tsp stevia

½ cup soft butter

1 tsp vanilla extract
