Sugar Free Chocolate Berry Cake

1Preheat oven to 350 degrees F for 5 minutes. Grease and flour a baking tin

2Mix the flour, baking powder, and baking soda together by passing them through a sieve a couple of times.

3In a large bowl, add the melted butter. Add 1/2 cup erythritol and stevia to the mix.

4Add milk, vanilla extract and heavy cream to the bowl. Mix well.

5Add 1 cup of pureed mix berries and cocoa powder to the bowl.

6Add the dry ingredients. Mix well.

7Pour the batter into the baking tin and bake 40 to 45 minutes or until toothpick comes out clean.

8Cool on wire racks for 10 minutes

9Heat a pan, add erythritol with remaining berries, slowly mixing all ingredients on low heat until erythritol melts.

10Serve cake with fresh berry mix on top.

1 tsp baking powder

1/2 tsp baking soda

1/2 cup butter

1/2 cup +1 tbsp erythritol

2 tsp stevia

1/4 cup milk

1 tbsp vanilla extract

1/2 cup heavy cream

1 1/2 cups mixed berries frozen/fresh (blackberry, blueberry, strawberry)

3 tbsp cocoa powder
