Sugar Free Coconut Cake

1Preheat oven to 350 degrees F for 5 minutes Grease and flour a baking tin.

2Mix the flour, baking powder, and baking soda together by passing them through a sieve a couple of times

3Beat the eggs in a mixing bowl. Add erythritol, stevia and vanilla extract to the mix. Add the dry ingredients, milk, melted butter, coconut, and mix well.

4Add the batter to a springform cake tin. Sprinkle coconut on top of the cake.

5Bake 40 to 45 minutes or until toothpick comes out clean.

6Cool on wire racks for 10 minutes. Cut the cake in slices and serve.


1 ½ cup + 2 tbsp of sifted common flour

1 ½ tsp baking powder

½ tsp baking soda

2 eggs

¼ cup. erythritol

1 ½ tsp stevia

1 tbsp vanilla extract

½ cup milk

½ cup of soft butter

½ cup desiccated coconut
