1Preheat oven to 350 degrees F for 5 minutes Grease and flour a baking tin.
2Mix the flour, baking powder, and baking soda together by passing them through a sieve a couple of times
3Beat the eggs in a mixing bowl. Add erythritol, stevia and vanilla extract to the mix. Add the dry ingredients, milk, melted butter, coconut, and mix well.
4Add the batter to a springform cake tin. Sprinkle coconut on top of the cake.
