Sugar Free Crumb Cake

1Mix the flour, baking powder, and baking soda together by passing them through a sieve a couple of times (like pretty much every cake ever).

2Add the eggs to the mixing bowl. Beat the eggs with an electric mixer until it's pale yellow in color.

3Add the erythritol, stevia, vanilla extract, milk, dry ingredients, and butter to the mix. Mix all ingredients well until smooth with an electric mixer

4Add the cake mix to a springform cake tin

5Cut the strawberry in thin slices and arrange over the cake in a circular fashion


1Add cold butter cubes and erythritol to the flour. Mix the crumb mix with a fork or hands until you get crumbs

2Spread the crumbs over the cake and strawberry slices.

3Place the cake tin in a pre-heated oven for 40 to 45 minutes or until toothpick comes out clean.

4Cool on wire racks for 10 minutes.

tsp. baking powder

½ tsp. baking soda

2 eggs

½ cup. erythritol

tsp. stevia

1 tbsp vanilla extract

½ cup milk

½ cup of soft butter


½ cup flour

¼ cup butter, chilled

1 tbsp. erythritol
