Sugar Free Gingerbread Cake

1Preheat oven to 350 degrees F for 5 minutes. Grease and flour a baking tin.

2Mix the flour, baking powder, and baking soda together by passing them through a sieve a couple of times.

3In a large bowl, beat the eggs with a mixer until pale and smooth. Add erythritol, stevia, and vanilla extract to the mix.

4Add spice mix and ginger to the mix.

5Add the butter, oil, milk and dry ingredients. Mix well.

6Pour the batter into the baking tin and bake 45 to 50 minutes or until toothpick comes out clean.

7Cool on wire racks for 10 minutes

8Serve with freshly whipped cream.


2 cups sifted common flour

2 tsp baking powder

1/4 tsp baking soda

2 eggs

1/4 cup erythritol

2 tsp stevia

1 tbsp vanilla extract

1 tsp spice mix(1/2 tsp cinnamon and 1/2 tsp nutmeg)

1 tbsp freshly grated ginger

1/2 cup of soft butter

1/2 cup oil

1/4 cup milk
