Sugar Free (And Gluten Free): Zucchini Pizza Boats

1Wash your zucchini and cut both ends off, then slice in half.

2Slice a small grove into the middle of each piece of zucchini to allow sauce to soak in, then apply 1 tbsp of pizza sauce to each piece. Spread evenly.

3Place zucchini halves on baking sheet. Add pizza meat, cheese, veggie toppings, and parsley, finishing with one last layer of cheese.

4Stick a toothpick in the middle to help secure ingredients while cooking. Bake for 15 minutes at 350 degrees.


At least 1-2 full-sized zucchini

Pepperoni or another appropriate pizza meat

1 tbsp. pizza sauce (per zucchini halve, make sure the sauce you get has no added sugar)

Grated cheese (any type)

Chopped purple onion

Sliced black olives

Fresh parsley
