Monkey Approved Sugar Free Banana Cookies!

Directions

1In a large mixing bowl add in softened butter, erythritol, coconut sugar, egg, and vanilla. Mix on low speed until all ingredients are fully combined.

2Mix in pre-mashed bananas slowly, until fully combined.

3Add all the dry ingredients together in a separate small bowl and mix well by hand. Then slowly add into the wet ingredients half a cup at a time on low speed until fully combined.

4Scoop batter onto parchment paper, approx 1 tbsp. in size.

5Bake at 350 degrees F, for 8-10 minutes. Let cool, enjoy.

Ingredients

3/4 cup of soft butter (or margarine)

1/2 cup of erythritol

3/4 of coconut sugar

1 egg

1/2 tsp of vanilla

2 medium ripe bananas, mashed

2 cups of flour (substitute robin-hood gluten free flour if desired)

1/2 tsp of baking powder

1/2 tsp of baking soda

1/4 tsp of salt

First step to easy-breezy-baking is setting out all the ingredients we need before we start!

Then in a large mixing bowl add in 3/4 cup of room temperature butter (softened).

Then add in a 1/2 cup of erythritol.

Thirdly, 3/4 cup of coconut sugar.

And then your egg: crack that baby open

Lastly, add in your 1 tsp. of vanilla, then mix all the ingredients together on low speed, until they are all fully combined.

Take a break from tossing in all the ingredients to mash up your two ripe medium sized bananas.

I used my pastry cutter. A fork would work as well if you don’t have one.

Toss your two mashed bananas in with the rest of your wet ingredients, and mix and low speed.

Take a moment to measure out all the dry ingredients correctly and put them all in a small bowl together to be mixed up all into one.

Then slowly add the dry ingredient mixture into the wet ingredients while the mixer is on a low speed.

Once all the flour is in, our batter should look a little something like this…

Now we can scoop our banana cookie batter onto cookie sheets lined with parchment paper, each scoop leveling to approx 1 tablespoon each.

Then fire those little moneys in your pre-heated oven, bake at 350 degrees F for 8-10 minutes.
