The magic baking powder in these sugar free blueberry banana muffins can really bring out the light and fluffy nature of the muffins.
May 29, 2015 1Preheat the over to 350 Degrees Fahrenheit. Grease the bottoms of 12 muffin tray slots with shortening, and then spray tray with cooking spray.
2Combine the dry ingredients in a large bowl.
3In a medium bowl mix the wet ingredients together (not the blueberries yet), then mix it into the large bowl with the dry ingredients.
4Once the mixture has be hand mixed together (to the point where it is kind of lumpy; do not overmix), add in the blueberries.
5Pour the mixture into your prepared trays about 2/3's full, and then bake for 20-30 minutes until the muffins are golden brown. Wait for 5 minutes after, and then remove them from the trays for serving. 1/2 a Cup of Agave Nectar
1/8th of a teaspoon of Stevia Organic Extract Powder (Or another 1/4 cup of Agave Nectar if you don't have any).
1/4 of a cup of unsweetened natural applesauce (If you decide not to use the Stevia, then you don't need to add the applesauce either).
1 1/3 cups of all-purpose flour
1 tablespoon magic baking powder
