Recipe Walkthrough (With Pictures)
All cake ingredients need to be at room temperature.
Like the start of most cake recipes, you’ll need to mix the dry ingredients (flour, baking powder and baking soda) by passing them through a sieve a couple of times.
Add melted butter to the mixing bowl.
Add 1/2 cup erythritol and stevia to the mix. Combine the ingredients until erythritol dissolves.
Add milk to the mix. Beat with an electric mixer
Add heavy cream to the mix
Add vanilla extract to the mix.
Continue beating with an electric mixer. Do not overbeat or the cream might curdle.
Puree 1 cup of mixed berries, add them to the cake mix.
Add cocoa powder to the cake mix.
Add dry ingredients (flour, baking powder and soda) to the mix.
Mix all the ingredients well with a hand mixer. Spread the cake mix in a springform tin.
Place the cake tin in a pre-heated oven for 40 to 45 minutes or until toothpick comes out clean. Allow to cool on the wire rack.
Add 1 tbsp erythritol to a pan over low heat.
Add mixed berries to the pan, cook on low heat until erythritol dissolves.
Place the cake on a plate
Top with mixed berries and serve.
