Directions

1Preheat oven to 350 degrees F for 5 minutes. Grease and flour a baking tin

2Mix the dry ingredients (flour, baking powder and baking soda) by passing them through a sieve a couple of times

3Dissolve the erythritol and stevia with soy milk. Add the melted chocolate, egg yolks, dry ingredients, soy milk mixture, butter and mix well

4Beat the egg whites separately and combine with the cake mix

5Pour the batter into the baking tin and bake 50 to 55 minutes or until toothpick comes out clean. Optional: Use a water bath to add moisture to the oven and provide a more even heat source than the direct heat of an oven

6Cool on wire racks for 10 minutes

7Garnish with additional melted unsweetened chocolate

Ingredients

1 1/2 cups of sifted common flour

1 1/2 tsp baking powder

½ tsp baking soda

2 tsp erythritol

1/2 tsp stevia

1/2 cup soy milk

5 ounces unsweetened chocolate, melted

2 extra large eggs or 3 large eggs - yolks and whites separated

1/2 cup of soft butter

Garnish with additional melted unsweetened chocolate

Walkthrough

PLEASE NOTE:  All ingredients for the cake need to be at room temperature

Separate the egg whites from the yolks. Mix the dry ingredients (flour, baking powder, and baking soda) by passing them through a sieve a couple of times.

Dissolve erythritol and stevia with soy milk

Melt the chocolate in a microwave (30 seconds) or use 1 ½ tsp. cocoa powder

If there are lumps in the melted chocolate and milk mix, pass it through a sieve

Add the dry ingredients (flour, baking powder and soda) to the chocolate mix

Add butter to the mix

Add egg yolks to the mix

Mix the ingredients well with a whisk noting that it will be dry until the egg whites are added in the next step.

Using either a whisk or hand mixer, beat the egg whites until peaks are stiff.  Add the egg whites to the mix.

Briefly mix the ingredients together.  Do not overmix.

Pour the mix in a well greased bundt cake tin

Place in the preheated oven with a water bath and bake for 50 to 55 minutes or until toothpick comes out clean. A water bath adds moisture to the oven and provides a more even heat source than the direct heat of an oven

Allow the cake to cool in the baking tin.   Garnish with melted unsweetened chocolate
