After a crazy Midnight baking session trying to create icing for this sugar free christmas cookie recipe, me and my friend Melissa had to postpone it until the next day (when the icing was ready).

But ’twas only a small setback!

These christmas sugar cookies are not only fabulous tasting, they are fabulous for you as well!

It’s a pretty simple recipe you’ll find, and if you use my sugar free chocolate frosting or sugar free cream cheese frosting on them, you won’t even be able to tell they’re sugar free!

If you already have the frosting ready, it should only take you about 30 minutes to make (really short oven time on this one).

Just make sure you arm yourself with as many fun christmas cookie cutters as possible, you don’t want your cookies to be boring, do you?

I mention in the video to put “icing sugar” on the cookies. I’m referring to my sugar free chocolate frosting or sugar free cream cheese frosting in case you were wondering.

Directions

1Mix the flour, baking powder, salt, and erythritol together in a bowl.

2With a pastry blender, fold in the butter to the dry ingredients. While mixing with a wooden spoon, add in the egg, cream, and vanilla extract. Mix into a ball of dough. You will have to use your hands and compress it so that it turns into a ball.

3Roll the dough out with a rolling pin until it is about 1/8 inch thick. Cut it out with your favorite cookie cutter shapes you have on hand.

4Bake at 400 degrees for 6-8 minutes until the cookies are brown on the bottom. Use a spatula to lift one cookie up in the oven to check to see if they are brown. Sugar cookies are easy to burn, so make sure you are vigilant with this!

5Add whatever icing or extras that you want on top.

3 cups of flour

1/2 cup agave nectar

1/2 cup of erythritol

1 1/2 tsp baking powder

1/2 tsp salt

1 cup of butter

1 egg

3 tbsp. of cream

1 tsp of vanilla extract
