Recipe Walkthrough (With Pictures)
PLEASE NOTE: All cake ingredients need to be at room temperature.
Mix the dry ingredients (flour, baking powder, and baking soda) by passing them through a sieve couple of times.
Add the eggs to the mixing bowl
Beat the eggs with an electric mixer until they are pale yellow in color.
Add the erythritol and stevia to the mix.
Add vanilla extract to the mix
Add spice mix to the cake mix
Add grated ginger to the mix
Add oil and butter to the mix
Add milk to the mix
Add dry ingredients (flour, baking powder, and soda) to the mix.
Mix all the ingredients well with a hand mixer.
Spread the cake mix in a flat pan.
Place the cake tin in a pre-heated oven for 50 to 55 minutes or until toothpick comes out clean. Allow to cool on the wire rack.
Cut the gingerbread cake in to pieces and serve.
You may also serve with freshly whipped cream.
