A Truley Delightful Sugar Free Oatmeal Cookie

1Preheat oven to 375 degrees fahrenheit.

2Combine and Beat the coconut sugar, butter and egg in a bowl. Beat the mixture until it is all mixed together.

3In a separate bowl, combine the flour, cinnamon, baking soda and salt

4Now mix the two bowls together. Once fully combined, add in your oatmeal and raisins.

5Make balls as big as a walnut. Place on a greased cookie sheet and press each one down with a fork.

6Bake for 8-10 minutes (or until cookies are golden brown)

1 cup coconut sugar

1 egg

1 tsp of vanilla

1 teaspoon of cinnamon

1 teaspoon of baking soda

1 cup of flour

1 tsp salt

3 cups of quick oats

1 cup of raisins

Here are all the ingredients we will need to make these delightful little treats.

Cream together the coconut sugar, butter and egg.

The batter should look something like this.

In a separate bowl combine all of the dry ingredients, flour, cinnamon and baking soda.

Slowly add in the dry ingredients, about 1 tbsp at a time, so it can mix in evenly.

Once all the dry ingredients are full combined, slowly add in the oats. Mixing continuously.

Next, we add in our raisins, on low mix them all in.

Now we should be ready to scoop our cookie dough out and onto a baking sheet 🙂

Take a heaping tablespoon and make little balls. Place on the cookie sheet, with enough room for the cookies to expand while cooking.

You can use a fork to flatten your cookies if you like. I personally like a more plump looking cookie.

Bake at 375 for 8-10min. When the tops turn golden brown and you can smell the deliciousness of the oats, they’re done!

Let cool, get a glass of milk and enjoy fully!
