Recipe Walkthrough (With Pictures)
The important thing to note – all ingredients for the cake need to be at room .Mix the dry ingredients (flour ,baking powder and baking soda) by passing them through a sieve couple of times
Add the eggs to the mixing bowl
Beat the eggs with an electric mixer until its pale yellow in color.
Add the erythritol and stevia to the mix.
Add vanilla extract to the mix
Add dry ingredients (flour, baking powder and soda) to the mix.
Add milk to the mix
Add butter to the mix. Mix the ingredients with an electric mixer.
Add 1 cup cubed pineapple pieces to the batter
Add the batter to a springform cake tin
Add the remaining pineapple cubes on top of the cake.
Place the cake tin in a pre-heated oven for 40 to 45 minutes or until toothpick comes out clean.
You may choose to brush the cake top lightly with melted butter to get a crisp and golden color on the top of the cake. Allow to cool on the wire rack. Due to sugar content in the pineapple, it will caramelize on the top and will be little brown and burnt at a few places.
Cut the cake in slices and serve
