Sugar Free (And Gluten Free): Zucchini Pizza Boats

Recipe Walkthrough (With Pictures)

Here’s every ingredient we need to make a super healthy, fast and tasty dinner!

Wash your zucchini and cut both ends off, then slice in half.

Slice a small grove into the middle of each piece of zucchini to allow sauce to soak in.

Place zucchini halves on baking sheet.

Then apply 1 tbsp. of pizza sauce to each sugar free zucchini pizza piece. Spread evenly.

Add pizza meat & cheese on top of the zucchini.

…and some more cheese on top of the meat (so you have cheese under the meat, and above the meat).

And veggie toppings – then maybe a little more cheese! At this point you’ve really got a sugar free zucchini pizza!

You can really put the ingredients on in any order you like, this is just what worked well for me.

Stick a toothpick in the middle to help secure ingredients while cooking.

Bake for 15 minutes at 350 degrees.

Ta-Da! We have a wonderful sugar free and even gluten free dinner, lunch or late night snack 😉
